What is Thai coconut curry hotpot?
Thai coconut curry hotpot is a hotpot variation with clear influences from Thai cuisine.
The base consists of coconut milk and broth, complemented by curry, aromatic ingredients such as lemongrass and ginger, and a fresh hint of lime.
The creamy coconut milk mellows the spiciness of the curry, while lime provides freshness. This creates a broth that is simultaneously creamy, spicy, slightly sweet, and fresh.
It is not a traditional Thai hotpot style, but a modern combination of hotpot and Thai flavors.

- 3 cm fresh ginger
- 1 stalk lemongrass
- 1 tablespoon soy sauce
- 1 teaspoon brown sugar
- 1 lime
- 1 tablespoon oil
- Optional: 1 red chili
For the hotpot:
- 200–300 g thinly sliced chicken
- 150–200 g shrimp
- 150 g tofu
- 150 g mushrooms
- 1 bok choy
- 1 red bell pepper

You can, of course, adjust these ingredients. Baby corn, bean sprouts, Napa cabbage, and shiitake also pair well with this broth.
How to make the Thai coconut broth
Step 1: Prepare the aromatics
Finely chop the garlic and slice the ginger thinly.
Bruise the lemongrass with the back of a knife. This will release the aromas better during cooking.
Optionally, slice the red chili into thin rings.
Step 2: Sauté the curry
Heat the oil in a pan.
Add the garlic, ginger, and curry paste and sauté for about one minute over medium heat.
Sautéing the curry paste briefly helps to release its aromas and adds depth to the broth.
Step 3: Add coconut milk and broth
Pour the coconut milk and broth into the pan with the curry paste.
Then add the soy sauce, brown sugar, and bruised lemongrass.
Bring the mixture gently to a boil.
Step 4: Simmer the broth
Let the broth simmer gently for about 10–15 minutes.
Taste and add extra curry paste, soy sauce, or chili if needed.
Remove the lemongrass from the broth before serving the hotpot.
Finally, squeeze the juice of half a lime into the broth.
Tip: Add the lime only at the end. This preserves its fresh flavor better.
How to prepare the hotpot
Pour the broth into your hotpot pan and bring it back to a good boil.
Arrange all ingredients in separate bowls around the pan.
Everyone can then cook small amounts of ingredients in the broth themselves.
Thin slices of chicken take longer to cook than shrimp or delicate vegetables. Therefore, cook small portions at a time and consider the cooking time for each ingredient.
This keeps the broth hot and allows you to try different combinations at your leisure.
What ingredients pair well with Thai coconut curry hotpot?
Chicken
Chicken is a natural combination with coconut and curry. Thinly sliced chicken breast or thigh works well in hotpot.
Shrimp
Shrimp add a subtly sweet and fresh flavor that beautifully complements the creamy coconut broth.
Tofu
Tofu absorbs the broth well, making it an excellent choice for a vegetarian option.
Mushrooms
Shiitake, enoki, and oyster mushrooms provide extra umami and a firm texture.
Vegetables
Bok choy, bell pepper, broccoli, baby corn, bean sprouts, and Napa cabbage pair well with the fresh and spicy flavors.
Noodles
Rice noodles and glass noodles are particularly delicious in this broth. They absorb the coconut-curry flavor well.
What dipping sauce goes with Thai coconut curry hotpot?
Since the broth already has a lot of flavor, a simple, fresh dipping sauce pairs well with it.
Fresh lime-chili sauce
For 2 people:
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tsp sesame oil
- 1 spring onion
- ½ red chili, finely chopped
- Optional: a pinch of sugar
Mix all ingredients and taste.
The fresh lime and chili provide a beautiful contrast to the creamy coconut broth.
Thai coconut curry hotpot with two broths
Do you have a hotpot with two compartments? Then you can combine the Thai coconut curry with a second soup base.
An interesting combination would be:
Coconut curry + tomato
The creamy, spicy coconut broth creates a nice contrast with the subtly sweet and savory tomato broth.
For lovers of spicy food, you can also opt for:
Coconut curry + Sichuan
This way, you get a creamy, spicy broth on one side and a powerful, spicy broth on the other.
Tips for a successful Thai coconut curry hotpot
Use full-fat coconut milk. This gives the broth a creamier texture and richer flavor.
Add lime at the very end. This preserves its fresh flavor well.
Start with curry paste cautiously. You can always add more.
Slice meat and vegetables thinly. This ensures they cook quickly in the broth.
Save the noodles for the end. They will then optimally absorb the rich coconut-curry flavor.
